Set yourself up.

Choose a vessel with enough room for the mixture’s intended change. Check whether the ingredients need a particular temperature and whether a hand or powered whisk is specified.

Three things to notice.

  1. For blending, check the base and sides for unmixed material.
  2. For a foam, watch the texture and the recipe’s stated stage.
  3. Stop to assess rather than assuming longer whisking always improves the result.
